Recipe of the Day: Jamaican Coconut & Sweet Potato Mousse

We all love a great dessert, one that just comes in after a wonderful meal and sweeps us off our feet. Well, today we have one that will definitely do that. This Coconut and Sweet Potato Mousse will have you begging for more yaad style. So grab these ingredients and start mixing. Check out the recipe below.

For 5 people ()

  • 8 ounces sweet potatoes, diced
  • 2 cups Coconut Milk
  • 4 ounces granulated sugar
  • 2 teaspoons vanilla
  • 2 cups heavy cream
  • 1 bottle fruit juice, preferably Mango or Orange
  • 1/4 cup dry coconut, thinly sliced, toasted


  1. Boil sweet potato in enough water to cover.  Drain, allow to cool, then blend with coconut milk, sugar and vanilla.
  2. Whisk heavy cream until stiff peaks are formed, then fold into the blended potato mixture.
  3. Boil fruit juice until it becomes syrupy.  Remove from flame and allow to cool.
  4. Spoon one tablespoon of the cooled syrup in the base of five shot glasses, then pipe on the mousse mixture.  Put to chill for 30 minutes.
  5. Decorate each with one strip of toasted coconut.

    Chill Time: 30 minutes
