Recipe of the Day: Jamaican Curried Tofu with Potatoes

Majority of us are meat lovers, man, what would we do without our meat? But, for some of you, meat is an after thought, and you seek other tasty, nutritious alternatives that will put you in the loop just like any meat loving person. Today we give you a great recipe for all the vegans or vegetarians out there, and we guarantee you will love it. Check it out below.


For 2 people ()

  • 1 teaspoon(s) ginger, crushed
  • 1/4 teaspoon(s) salt
  • 1 cup(s) tofu, diced
  • 6 whole plummie tomatoes, diced
  • 2 teaspoon(s) turmeric powder
  • 3 medium Irish potatoes
  • 1/4 teaspoon(s) cumin seeds
  • 1/4 cup(s) water
  • 1/4 teaspoon(s) mustard seeds
  • 1/4 teaspoon(s) Hot Pepper Sauce
  • 1 cup(s) Vegetable Oil

Curried Tofu with Potato Directions

Heat Vegetable Oil and use to fry the diced tofu. Drain and set aside.

Fry diced potatoes, drain and set aside.

Pour 1/2 cup of the hot oil in a sauce pan and allow to heat.  Add the mustard seeds and allow seeds to pop.

Mix in the grated ginger, diced tomatoes, cumin seeds, hot pepper sauce and salt and cook for about 3-4 minutes.  Mix in the turmeric powder and water and stir well.

Fold in the fried tofu and Irish potatoes and allow to simmer for about 5 minutes.

To Serve: Serve with steamed Brown Rice and a vegetable salad.
