Recipe of the Day: Jamaican Chicken with Sweet n Spicy Hot Pepper Sauce

Chicken, Chicken, Chicken! No matter how much we get tired of this protein, we can never throw it out the door. This poultry is so versatile that it makes every other meet insignificant when its around. Today we give you a great tasting recipe to literally spice up your love affair with this chunk of protein. For 4 people

  • 2 pound(s) chicken breast
  • 1/4 cup(s) Vinegar
  • 6 cup(s) water
  • 3 tablespoon(s) soy sauce
  • 1 tablespoon(s) Jerk Seasoning
  • 1/4 cup(s) Vegetable Oil
  • 2 stalk(s) escallion, chopped
  • 1 large onion, diced
  • 3 clove(s) garlic, chopped
  • 2 teaspoon(s) scotch bonnet pepper, chopped
  • 1 cup(s) chicken stock*
  • 1 bottle(s) Sweet n’ Spicy Hot Pepper Sauce (pick up any brand in your grocery store)
  • 1 cup(s) pineapple, diced
  • 1/2 cup(s) green sweet pepper, diced
  • 2 teaspoon(s) cornstarch

Chicken in Grace Sweet n’ Spicy Hot Pepper Sauce Directions

Cut chicken breast in bite size pieces and wash in a mixture of vinegar and water.

Season chicken with soy sauce and jerk seasoning and allow to marinate for 15 minutes.

Heat saute pan and add Virgin Coconut Oil. Mix in the escallion, onion, garlic and scotch bonnet pepper, and saute for about one minute.

Fold in the seasoned chicken breast and cook for about five minutes. Pour in the chicken stock and continue cooking for a further 5-10 minutes.

Mix in the Sweet n’ Spicy Hot Pepper Sauce and cook stirring constantly for about 5 minutes.

Fold in the diced pineapples and sweet pepper and cook for a further two minutes. Thicken with dissolved cornstarch (using liquid from the pineapple can).

Method Note: Ensure pot is well heated before adding the oil.
Recipe Note: Fresh pineapples may also be substituted for the canned pineapples. We just made it more convenient.
*Chicken stock : Boil 1 packet Soup Mix with 4 cups water. Strain and use as desired.
To Serve: Serve with Herb Spaghetti or boiled Rice and a vegetable salad.
