There often comes a time when you come home from work, tired, drowsy and just want to run to your bed, but instead you are left in the kitchen wondering, “What can I cook for dinner that’s quick and easy?” Well the answer is here…Curried Rice! We know you have heard about Curried Chicken, but today we are giving you another reason to pick up some Curry Powder when you go shopping. Check it out below.

Ingredients
For 4 people
- 2 tablespoon(s) vegetable Oil
- 2 teaspoon(s) ginger, grated
- 1 tablespoon(s) Curry Powder
- 1 medium onion, chopped
- 1 stalk(s) scallion, chopped
- 1 tablespoon(s) garlic, chopped
- 1 whole scotch bonnet pepper
- 1 sprig(s) thyme
- 1/2 packet(s) Coconut Milk Powder
- 3 1/2 cup(s) water
- 3 1/2 cup(s) water
- 400 grams Long Grain Rice
- 1 can(s) Mixed Vegetables, drained
Jamaican Curried Rice Directions
Whisk together the Coconut Milk Powder, the water and salt and pour over the sauteed seasonings and bring to a boil.
Add the Long Grain Rice, stir well and bring to a boil. Lower the flame, cover and steam for about 25 minutes or until the rice grains are tender.
Fold in the drained Mixed Vegetables using a fork. Cover and heat for a further 2 minutes.
