Recipe of the Day: Jamaican Festival

The Festival is a delicious side that is very popular in Jamaican cuisine. It can be eaten with a variety of meat and fish options, and goes even better with Jamaica’s national dish, Ackee & Saltfish. The festival is a dough batter that is mixed and then fried until the outside is crisp with a soft textured inside. Check it out below.

Preparation time: 10m

Cooking time: 10m


For 4 people

  • 1.5 cups Flour
  • 3 tablespoons Cornmeal
  • 1/2 cup Water
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 3 cups Vegetable Oil (for frying)

Festival Directions

In a bowl add and mix all the ingredients except Vegetable Oil to form dough.

Portion dough into 1 1/2 oz pieces, and then shape them into cylinders.

Shallow fry over medium flame until golden brown.  Remove and place on paper towel to remove the excess oil.
