Jamaican Mannish Water

Food is one of, if not the most common denominator that defines our individual cultures.

It brings us together, shapes our identities and influences subcultures and beliefs. In Jamaica, the latter is strongly associated with foods of hardship, sustainability, and convenience. The Jamaican Mannish Water is a prime example of a dish formed out of hardship and a “don’t waste anything” culture.

A rich, tasty broth made from the head, stomach, and feet of a Ram Goat (male Goat), the Jamaican Mannish Water as the “Mannish” suggests, is said to make a man (or woman) strong, virile and powerful. It is commonly served at late night street dances and big events such as funerals and wakes.

Today we give you the recipe to make your own Mannish Water, and reap the benefits of an authentic flavor, a national treasure and maybe even become a little “Mannish.” 😉

  • Chopped up goat head (burnt is best) – can be sourced from local butcher or Meat Shop
  • Goat Feet (burnt is best) – can be sourced at local Butcher or Meat Shop
  • Garlic, Green Onion, Thyme, Pimento Seeds, and Salt
  • Whole Green Pepper, Black Pepper,
  • 1 pack Grace Chicken Soup Mix – Buy here
  • 3-6 Green Bananas
  • 1 ½ lbs Yellow Yam (or White)
  • 3 small Irish Potato
  • Flour (for dumpling)
  • 2 Whole Scotch Bonnet Pepper


  1. Wash chopped Goat Head
  2. Put in a large pot (Pressure Cooker best as recommended below) with enough water to cover the Meat
  3. Add 3 teaspoons Salt, 8-10 seeds of Pimento and let cook and 5 crushed Garlic Cloves
  4. Cook on a medium/high stove till Meat tender
  5. Add more water and also 1 pack Grace Chicken Soup Mix – Buy here
  6. Peel and slice Irish Potatoes
  7. Peel Green Bananas (or cut off the top and bottom and make a slit down the length of the Banana)
  8. Add Peel and add Yellow Yam when Bananas are almost cooked.
  9. When almost done black Pepper, Thyme, some Pimento Seeds, Green Onion, whole Scotch Bonnet Pepper (do not let it burst open) and let simmer
  10. Serve hot
